Marinades are probably the most important ingredient to any cookout. A good marinade not only keeps your grilling moist and flavorful, but they make it healthier. These ten marinade recipes are the most popular on my site. They represent the kinds of marinades you should be trying. Try them out and then start experimenting yourself to make the marinades that are perfect for you. You will find that most of these marinades work with a specific type of meat, but the basics are always the same. Try one out and get the most out of your grilling.

 

Teriyaki Marinade

Want to get that great Teriyaki flavor into your favorite dish? This marinade is sure to add flavor to whatever you're grilling. This marinade works particularly well with pork and poultry. You can make an extra batch, boil it down until thickened and drizzle on top of sliced grilled meats and vegetables.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Makes about 2 1/2 cups

Ingredients:

  • 1 cup soy sauce
  • 1 cup water
  • 3/4 cup sugar
  • 1/4 cup Worcestershire sauce
  • 3 tablespoons distilled white vinegar
  • 3 tablespoons vegetable oil
  • 3 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon grated fresh ginger

Preparation:

Combine all ingredients and mix until sugar is completely dissolved.

 

 

Jamaican Jerk Marinade

 

You've heard of Jerk seasonings and Jerk rubs, well this is a jerk marinade that gets that great jerk flavor deep into the meat. You can use this marinade on all kinds of meat and poultry.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: Makes about 1 cup

Ingredients:

  • 1 medium onion, finely chopped
  • 1/2 cup scallions, finely chopped
  • 1 hot pepper, finely chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oil
  • 1 tablespoon cider or white vinegar
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons sugar
  • 1 teaspoon salt (kosher or sea salt is preferable)
  • 1 teaspoon Jamaican Pimento (Allspice), ground
  • 1 teaspoon black pepper, ground
  • 1/2 teaspoon nutmeg, ground
  • 1/2 teaspoon cinnamon, ground
  • dash hot sauce (optional)

Preparation:

Combine all ingredients in a blender and blend until smooth. This marinade can be stored in the refrigerator for up to one month.

 

Pineapple Marinade

 

his sweet, fruity marinade has the power of pineapple and cider vinegar to work its way into meat. Add to this a collection of flavors that turn any cut of pork or chicken into something truly great.

Prep Time: 6 minutes

Cook Time: 10 minutes

Total Time: 16 minutes

Yield: Makes about 2 cups

Ingredients:

  • 1 cup crushed pineapple
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 1/4 cup cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger powder
  • 1/4 teaspoon powdered cloves

Preparation:

Mix all ingredients together and use immediately or store in airtight container for up to 7 days.

 

Brisket Marinade

 

Whether you are smoking or grilling a brisket, this marinade will add a lot of flavor and help keep the meat tender.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: Makes about 2 1/2 cups

Ingredients:

  • 1 1/2 cups red wine
  • 1/2 cup olive oil
  • 1 1/2 tablespoons prepared mustard
  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon wine vinegar
  • 1 tablespoon horseradish
  • 1 1/2 teaspoons salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Preparation:

Mix all ingredients together. Pour over brisket and let marinate overnight in the refrigerator, turning occasionally. Remove brisket from marinade and boil remaining marinade for 5 minutes to use as a mop.

 

Classic Steak Marinade

 

A great steak doesn't need any help. A not so great steak does. If you are grilling a steak that isn't the most tender then this classic steak marinade is perfect.

Yield: Makes about 3/4 cup

Ingredients:

  • 1/4 cup cooking oil (see note below)
  • 1/4 cup red wine vinegar
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Preparation:

Combine all ingredients and mix well. See Marinating Beef to get the right time for your steak.

Note: You need an oil with a high Smoke Point so choose a refined oil, extra light olive oil, or avocado oil.

 

Lemon and Rosemary Marinade

This is a great marinade recipe for chicken. It gives you that lemon-herb flavor that you find on so many store made chickens, but this is better.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Makes about 1 cup of marinade

Ingredients:

  • 3 large lemons
  • 1/4 cup fresh rosemary (2 tablespoons dried rosemary)
  • 1/4 cup of olive or salad oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

Preparation:

Cut lemons in half and squeeze out the juice into a nonreactive bowl or resealable plastic bag. Add in remaining ingredients, mix well. Great for chicken. Marinate for 2 hours.

Greek Lamb Marinade

This Greek-style marinade can be applied to any meat, but is particularly good on lamb. Let the meat marinate for a while so the flavors can infuse.

Prep Time: 10 minutes

Yield: Makes about 1/2 cups

Ingredients:

  • 3 tablespoons lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon bay leaf
  • salt and pepper to taste

Preparation:

Combine all ingredients and mix well. Use this marinade on all cuts of lamb. Plan on marinating chops and small cuts for about 4 to 5 hours. Large cuts (double recipe) like leg of lamb should be marinated for 8 hours to overnight.

Mexican Marinade

This marinade can be used on practically any meat or Mexican-style dish. You'll get a great lime and cilantro flavor without overpowering the flavor of the meat.

Prep Time: 15 minutes

Yield: Makes about 2 cups

Ingredients:

  • 1/3 cup cider vinegar
  • 1/3 cup white vinegar
  • 1/3 cup olive oil
  • 1/3 cup fresh cilantro, chopped
  • 6 cloves garlic, minced
  • juice of 1 lime
  • 2 tablespoons cumin
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried oregano
  • 1 teaspoon salt

Preparation:

Combine all ingredients and mix well. This marinade works best if it is made a day in advance so the flavors can blend. Marinate beef, lamb and pork for about 6 hours, poultry for 4 hours and fish for 1 hour.

Beef Rib Marinade

This marinade adds a lot of flavor to your beef ribs. The acid from the lemon juice and vinegar will keep beef ribs nice and tender as they smoke.

  • 1/4 cup lemon juice
  • 1/4 cup white vinegar
  • 1/4 cup olive oil
  • 3 tablespoons honey

Preparation:

Bulgogi Marinade

This is the traditional marinade recipe for Korean Bulgogi, which is a marinated steak cut into strips and served up on lettuce leaves or rice. This is also a great marinade for any cut of beef.

Prep Time: 20 minutes

Yield: Makes about 2 cups

Ingredients:

  • 1/2 cup soy sauce
  • 1/3 cup sugar
  • 3 tablespoons sake (or rice wine or sherry)
  • 2 tablespoons sesame oil
  • 8 cloves garlic, minced
  • 4 scallions (green onions), minced
  • 2 tablespoons toasted sesame seeds
  • 1/2 teaspoon black pepper

Preparation:

Combine all ingredients in a bowl and mix until the sugar has dissolved. Slightly heating the marinade may help it mix better.

Note: To toast sesame seeds place them in a hot saute pan and gently toss until they start to brown. This takes just a few seconds. Pour off into a bowl.

This marinade is used to make Bulgogi or Korean Sesame Beef. It can be served with a spicy dipping sauce.
